After watching the documentary "Food, Inc." I stopped buying mega farm beef in all forms. I honestly thought that the cost of local, natural, grass fed beef was going to be too prohibitive to keep beef in our diet. A few weeks later I saw an ad in New Mexico Magazine for JX Ranch and visited their web site. The cost is not prohibitive at all and is in fact an excellent deal for such quality beef. After our first budget variety pack arrived I knew we'd be customers for life. As if the ranching practices weren't enough to convince me they are a smart choice, what really sold me was the taste and even the smell while cooking. I grew up in south America where any beef we ate came fresh from the butcher down the street. When we moved back to the U.S. in the 90s, we ate "mega-farm" beef because that's what was readily available in Michigan, Texas and Alabama where we lived. I started to forget what quality beef tasted like until now. I am so excited to be reminded of that familiar aroma and to now be able to provide my family with the same. While shopping, I would cringe at the idea of feeding my family meat from an unknown source; it was tasteless, tough, and questionable.   After buying your beef, I relish the thought of cooking a wonderful meal, free from any doubt regarding the taste, texture, or origin of food my family is consuming.  Every time I take out a package of meat to cook, grill, or smoke, I know it is going to be flavorful, lean, and tender.  Not to mention the relief of knowing exactly where our meat is coming from, how it has been raised, and how it has been processed.  The steaks are so tender, my 5 year old daughter eats her share and then begs for more.  The roasts are so flavorful I don't have to use any seasoning, just the natural taste is enough; coming out so tender no knife is needed.  The hamburger is lean and cooks without shrinking; no more fillers needed to grill hamburgers!  I am impressed with the quality of this beef and know without a doubt I will never purchase meat from a store again.  My family and I thank you for the opportunity to have a healthy alternative to what is offered in stores.

We have had our grass fed beef for about 6 months now, and have thoroughly enjoyed the quality of the meat. The Sirloin steaks are extremely tender; the Rib-eyes are even more tender, and all the meat has an excellent flavor. The ground beef is lean and tasty and makes wonderful hamburgers and meatloaves. The roasts are excellent, and the recipe Mimi sent made the best pot roast I have ever eaten! An important bonus for my family is that we are getting all the nourishment and healthy balance of Omega 3 and Omega 6 in our diet from a fully grass fed beef. I have already reserved my beef for next fall and will be a regular customer from now on!

I want to let you know how much we love your beef!  My husband thought I was crazy to drive all the way to Tucumcari just to buy meat.  Once we started cooking with it he knew why. The hamburger is unmatched in taste from anything I have found since arriving in New Mexico. The tenderloin is probably the best I have ever tasted. I like to eat a good cut of meat prepared medium rare to rare and that is exactly what I did with the first of the steaks I tried. Excellent! I’ll be back for sure.

I ordered a full cow from you about a month ago and I just wanted to write after I have had a chance to sample many of the cuts.  First the quality of the beef is great, better than I had hoped.  It is full of flavor as I expected.  But what surprised me was the quality of the lower end cuts.  Two nights ago I served just a simple chuck steak which I marinated for a short time and it was very tender and tasty.  The stew meat was ready to eat in a shorter than normal time and without the need of a pressure cooker to reduce the connective tissue. The beef is great.  We have only had the ground beef and a roast, but they have been excellent.  My roast beef-- 1.5 hours in my grandma's pressure cooker with wine and broth and garlic--my husband took the first bite and said "I think you really have something going with this Tucumcari connection".  Lean and flavorful.  No more.. how can I describe the store beef.. no more "muckiness" when you take it out of the wrapper.  I guess that would be the fat. I will order more when we run low.

I picked up my 1/4 beef  in Ft. Sumner and had my first taste of it last night. Nothing fancy, just a steak with some beans, and honestly, it was one of the best-tasting steaks I think I've ever eaten.  I grew up on a farm where we raised our own beef, no hormones, etc. just grass-fed until we butchered them...that steak last night reminded me of that---perfect! We received Variety Pack of beef for Christmas - What a wonderful gift! First, it came very well packed for travel. Second it came well portioned and well wrapped for easy freezer storage. The meat has a really well defined flavor and is quite tender.
