TOTAL COST & YIELD

Your total cost for your 1/4, 1/2 or whole beef will be based on the weight and yield of your particular beef.   We butcher at anywhere from 650 lb to 900 lb live weight.  Below are the total amounts you can expect to pay.  This total estimated cost includes the purchase of the animal (or portion thereof), transportation to the custom processor, and their charges (butchering, 21 days of dry-ageing for optimum tenderness and flavor in a temperature controlled cool-room, and cutting & wrapping into portion sized packages as per your instructions on the order form):

HOW TO ORDER YOUR BEEF

To place your order, you send us a deposit together with your completed Custom Order Form or JX Ranch Package to reserve your whole beef, 1/2 or 1/4 of a beef (for 1/4 beef please use JX Ranch Package).  Let us know if you prefer your beef to be lightly grain supplemented for 30 days while still on pasture and also if you have any preference as to a smaller or a larger animal.  When we get close to slaughter day, we will weigh the animal, and notify you of the amount you need to send us to complete the purchase of the beef from us.  We sell the beef on a live weight basis also known as "on the hoof" - $1.40/lb for a whole beef, $1.50/lb for 1/2 beef and $1.60/lb for 1/4 of a beef.  We will then transport it to Fort Sumner Processing, where it will be custom butchered, aged for three weeks for optimum tenderness and flavor, packaged as per your specifications on the order form, and frozen.  You will pay Fort Sumner Processing for their services separately (total estimated cost per pound of meat you get above includes the processing charges).  You have the option of picking up your meat at Fort Sumner Processing, or we can ship your frozen meat with UPS, packaged on dry-ice.   We will inform you of the balance due including shipping before we ship.  For New Mexico buyers, please ask about possible deliveries. 

You can also purchase a smaller 20 - 25 lb  Variety Pack box meat, for those who are looking for smaller quantities of meat or who may not have the freezer space for the larger cuts.  We can ship your Variety Pack with UPS on dry-ice.

If you are ordering 1/4 beef you need to use the JX Ranch Package, unless you are splitting 1/2 beef or more with a friend or family member.  This is so that the buyer of the other 1/4 does not end up with lesser cuts.  On the custom order form (whole and half beef only) you may choose exactly what cuts you want, how thick you want your steaks, how big you want your roasts, and how lean you want your hamburger meat etc.  Or you can choose our JX Ranch Package which is the selection we use for our own meat.  Organ meats such as liver, kidney, etc. can be requested but not guaranteed except for whole beef orders, since there is only one of each organ.  If you have any questions at all, please contact us and we'll be glad to help you.  If freezer space is a concern, or you would like to sample a smaller amount you can purchase our Variety Pack, which will give you a good sampling of our delicious beef.

"JX Ranch Natural Beef " is from animals that are born and raised on our ranch, have never received any antibiotics, growth-hormones, ionophores, animal by-products or insecticides.  Our pastures are never fertilized or sprayed. Our beef is entirely grassfed on native pastures, and therefore lean and healthy.  You can also ask for your beef to be lightly grain supplemented for 30 days while still on pasture. The cattle are handled in a gentle and no-stress manner, and raised in their natural environment throughout their entire life, and will provide you and your family with healthy, wholesome, lean and flavorful meat.   

PAYMENT POLICY

You pay a deposit at the time of ordering your beef.  A few days prior to processing, we weight the animal, and give you the live weight.  At this time we ask that send us the remainder due to us for the animal, which needs to be received by us prior to transporting your beef to the Processor.  Processing fees are to be paid directly to Fort Sumner Processing when you pick up the meat, or prior to us delivering it to you. The processing charges are included in the total estimated cost per pound in the above table. 

SHIPPING

Local buyers can pick up their frozen cut and wrapped meat at Fort Sumner Processing.  We also offer delivery to certain areas in New Mexico.  Out-of-State orders are shipped on dry-ice using UPS, and we will email you the tracking number.  Please check with your local UPS office that they can assure timely delivery to your address.  We ship your frozen meat packages on dry-ice in styrofoam coolers.  Meat should be placed in freezer immediately upon receipt.
